I made this recipe completely by accident when a batch of vanilla ice cream started off badly LOL! I thought it was a great time to share it, with the holiday season and colder weather quickly approaching. It’s truly the best hot chocolate I’ve ever had – and I’m normally not the biggest hot chocolate fan. In the words of Judy the Elf from The Santa Claus movie, “Not too hot, EXTRA chocolate, shaken – not stirred”
You Will Need:
- Heavy Bottomed Saucepan
- Spatula
- Measuring Cups & Spoons or Food Scale
- Large 24oz Mason Jar (the best container to work with IMO)
- About half an hour for prep & cook time
Ingredients:
- Heavy Cream – 1 cup (235 grams)
- Milk – 1 cup (245 grams)
- Sugar – 3/4 cup (150 grams)
- Salt – 1/4 teaspoon (1.5 grams)
- Vanilla Bean – 1 whole bean, scraped (or 1 tablespoon vanilla bean paste)
- Cocoa Powder – 3 tablespoons (24 grams)
- Water – 3 tablespoons (45 grams)
Directions:
Cut the vanilla bean pod down the center lengthwise and use a spoon to scrape out the beans. Add the heavy cream, milk, sugar, salt, and vanilla bean pod + seeds (scraped out) into the saucepan. Cover with a lid and warm on medium heat until it starts to boil. Take it off the heat and let it steep with the lid on for 20 minutes. During this 20 minute waiting period, combine the water and cocoa powder in a small bowl or cup so it forms the consistency of a slurry. Once 20 minutes has passed, remove the vanilla bean pod from the saucepan and pour the warm liquid into a mason jar (one with a lid). Add the cocoa slurry to the jar, screw on the lid and shake it up! Once there are no longer any thick spots of chocolate, you are ready to enjoy
Notes: I use Dutch processed cocoa powder because it has a smoother, softer flavor, but regular cocoa powder should also work just fine. This recipe makes enough for 2 decent sized cups of hot chocolate. You can easily double/triple the recipe or make multiple batches for a larger crowd. Tip: Top off your hot chocolate with freshly made whipped cream for an even more decadent touch!
